These delicious salmon tostadas are so easy to make! Low in carbohydrates, high in healthy fats & moderate protein, making them the perfect fast-breaking meal. I love Mexican food & its bold flavors, so naturally I had to give it a twist to fit my fasting lifestyle. I take on more aggressive fasts during my follicular phase to kick off autophagy and ketosis, so meals that keep glucose and insulin low are my go-to. My family loves a good taco, but these tostadas have become an instant hit in my home!
INGREDIENTS (yields for 2 tostadas)
- 8oz raw salmon (I like the one from @seatopia)
- Tortillas (I used Siete Almond Tortillas)
- 1 1/2 avocado
- pickled shallots
- garlic powder
- nion powder
- Himalayan salt & pepper
- feta cheese (optional)
- red pepper flakes
DIRECTIONS
- Start off by preheating your oven at 350°F and then bake your tortillas 15-20min.
- Then use your avocado to make an avocado mash, which we're going to use to coat the tortilla.
- Get your pickled shallots ready and your salmon.
- Season your salmon with garlic powder, onion powder, and salt & pepper to taste.
- Cook in the air fryer for 10 min at 400°F.
- Now start building your tostada. Start with the avocado mash, add the cooked salmon, feta cheese, shallots and sprinkle the red pepper flakes for a little flavor.
- Here you have the perfect fast-breaker meal!
