Mediterranean Veggie Platter

I love entertaining and house parties are my thing! I like to offer my guests the healthiest and freshest foods when they come over. I reached out to my dear friend Sally from @mysexyveggies to help me create the party dish... so we created a Mediterranean Veggie Platter using a few of her famous recipes. Hope you all enjoy!
Crudités:
The sky is the limit ! Any fresh raw veggies you love will be great with tahini & hummus dip.
Grilled veggies will be delicious too ! 
Homemade tahini dip:
Ingredients:
1lb Tahini raw sesame paste ( I use the 365 from WF )
3-4 squeeze lemons
2-2.5 cups of cold water
Spices: sprinkle to taste: cumin, salt & white pepper
Instructions:
For a perfect creamy texture combine all ingredients in a food processor and blend until perfectly combined, *add water/ lemon if needed until you get the perfect consistency, if you don’t have one, you can combine all the ingredients in a large size mixing bowl and whisk it well, it’s a great arm workout !
  • Note : use ice cold water (without the ice ) ! It makes a difference
Lazy sexy homemade hummus:
Ingredients:
2 ( 15oz ) cans organic chickpeas
2 garlic gloves
1/4 tbs olive oil
6tbs tahini
6tbs fresh lemon juice only
Sprinkle to taste: cumin, salt & white pepper
Instructions:
  • Place chickpeas and one garlic clove in a medium pot and cover with water by 1". Bring to a boil over high heat, then reduce heat to medium-low and simmer, undisturbed, until chickpeas start falling apart, about 20 minutes. Reserve 1 cup cooking liquid, then drain chickpeas.
  • Transfer chickpeas to a food processor. Add garlic, lemon juice, tahini, salt, and 2 Tbsp. reserved cooking liquid and process for about 5 minutes until creamy and smooth. If at any point the hummus appears dry or very thick, add lemon juice / water / olive oil to adjust the consistency and process just until combined. Transfer to a medium bowl and drizzle with more olive oil .
