This baked feta and veggies recipe is SO delicious and easy to make! Topped with red pepper flakes and cumin, it can be both an appetizer or a main dish. I paired mine with Jade Rice and it made for the perfect lunch. Enjoy!

- Add cumin and red-pepper flakes, season with salt and pepper, and toss until evenly coated.
- Nestle the feta slices into the vegetables.
- Roast for 15 to 20 minutes, until the vegetables are charred at the tips and tomato skins start to break down.
